Muffins are a quick, easy and portable comfort food staple. Whether you’re inside sitting by the fire or outside staying cozy on a park bench, muffins are an all-season tasty snack to have on hand. Their generation-spanning appeal has produced new recipes as well as twists on classics. If you’re looking to bake up some magic, here are five feel-good muffin recipes. 1. Blackberry lemon zest muffins

This fruity and moist muffin recipe is all about the buttery crumble. First, combine flour, sugar, salt and baking powder with eggs, milk, oil and vanilla extract. Next, throw in some lemon zest to the mix before folding in frozen blackberries. Once thoroughly combined, pour the batter into a lined muffin tray. Top off with a generous amount of crumble made from bits of cold butter mixed with flour and sugar. Bake until golden on top and enjoy!

2. Pumpkin cream cheese swirl muffins

Pumpkin lovers will definitely want to try this muffin recipe! Begin by whisking together sugar, brown sugar and eggs. Next, add pumpkin purée, vegetable oil and vanilla extract. After mixing, add flour, pumpkin pie spice, baking soda and a pinch of salt. Pour the batter into a lined baking tin. Then top with a dollop of cream cheese beaten together with sugar, eggs and vanilla extract. Use a toothpick to swirl around the pumpkin and cream cheese mixture before baking.

3. Vegan oat muffins

These easy vegan muffins are made with a simple three-ingredient batter. In a blender, add oats, bananas and baking powder. Pour the batter into a lined muffin tray and bake. Once they’re out of the oven, top the muffins with a cinnamon-snickerdoodle nut butter spread, sliced bananas and cinnamon.

4. Spinach feta and sweet potato muffins

Who says muffins can’t be savory? First, combine mashed sweet potatoes, eggs, milk, garlic, mixed herbs, salt and pepper. Next, add chopped baby spinach, chopped feta and flour. Then fold into the mix. Pour the batter into a muffin tray, bake, and enjoy the handheld meal.

5. Matcha mochi muffins

Matcha and mochi are a match made in TikTok food heaven. These spongy muffins are made from a combination of melted butter, eggs, granulated sugar, brown sugar, vanilla, coconut cream, evaporated milk, mochiko flour, matcha powder, salt and baking powder. The finished muffins are crispy on the outside and soft and squishy on the inside.
