The Best Lancashire Hot Pot Recipe You'll Ever Try

Lancashire hotpot is a real British classic comfort food recipe, as with these types of dishes every Lancashire kid will love his Mum's recipe the best, classically the ingredients are limited to stewing lamb of some sort, onions and stock. This stew is then topped with sliced potato and baked until perfect. I've added some carrot and celery plus some herbs. As I'm avoiding carbs still I've opted for a celeriac to replace potatoes and I didn't thicken the gravy with flour, other than that I should not have offended to many Lancastrians?
