Fourteen restaurants, hotels and other businesses in Wichita were out of compliance during food safety and lodging inspections conducted by the Kansas Department of Agriculture over the past two weeks.

They were cited for a number of violations, including filth and grime in kitchens, a “heavy build up of bodily fluids” on a motel room toilet, roaches on bath towels, a food truck without power, restaurant employees who didn’t wash their hands after touching raw meats, sinks with no hot water, food that wasn’t kept cold enough, bloated and puffy packages of raw chicken for sale, frozen foods that were thawing out, dirty containers in clean storage and more, according to inspection reports.

Information about the food establishments and hotels and motels, as well as a summary of their violations, appears below. The list includes inspections conducted in Sedgwick County from July 14-27. Two businesses were out of compliance between July 14 and July 20. Twelve were out of compliance between July 21 and July 27.

This list was compiled on July 29.

More than 120 establishments passed inspections during that same time. A list of those also appears below. Some may have been non-compliant in previous weeks.

Out of compliance inspections

July 14-20

Frontier Motel, 1623 S. Broadway in Wichita — One violation on July 16 during a modified complaint inspection. Around 20 roaches of varying sizes were crawling around a mini fridge in one room. The next listed inspection date was July 26.

Slim Chickens, 2313 N. Greenwich in Wichita — Two violations on July 15 during a follow-up inspection. An employee didn’t wash their hands after handling raw chicken, raw chicken and cooked chicken wings weren’t cold enough in refrigeration. Next inspection: Sept. 15.

July 21-27

Auto Motel, 1230 N. Broadway in Wichita — Seven violations on July 23 during a modified complaint inspection. There was a “heavy build up of bodily fluids” on a toilet in one room, dirt and debris on carpet behind a bed in one room, two rooms had damaged dressers, roaches on bathroom towels provided to guests in one room, extended-stay rooms were not being serviced every five days, holes and blood stains on bed sheets in two rooms, roach and flies in a room. Next inspection: Aug. 2.

Charleys Philly Steaks at Towne East Square, 7700 Kellogg Drive, Suite VC06 in Wichita — One violation on July 22 during a follow-up inspection. Cheeses and lettuce weren’t cold enough in the refrigerated preparation table by the grill. Next inspection: Sept. 22.

El Gusto Mexican Eatery (mobile vendor/food truck), 1601 N. Meridian in Wichita — Four violations on July 23 during a follow-up inspection. There was no power in the food truck and cooling units weren’t operating during the inspection, cold food was out of temperature for more than 30 minutes, water heating wasn’t functioning due to lack of power, lettuce and cheese in a refrigerated preparation table wasn’t cold enough, water pump wasn’t functioning due to the lack of power so there was no water available. Next inspection: Aug. 2.

Emerson Biggin’s Sports Bar & Grill, 2330 N. Maize Road, Suite 100 in Wichita — Seven violations on July 24 during a complaint inspection. Living roach on the wall by the fryers in the kitchen, sliced tomatoes and shredded lettuce weren’t cold enough in a refrigerated preparation table, bag of pork sausage pizza topping wasn’t labeled with the date it was opened, no probe food thermometer on site, employee was handling customers’ ready-to-eat tacos with their bare hands, back door was propped open during the inspection which can allow pests inside the building, raw eggs were stored above bags of macaroni and cheese in a cooler. Next inspection: Aug. 3.

Fat Ernie’s Family Dining, 2806 S. Hydraulic in Wichita — Three violations on July 24 during a follow-up inspection. Living cockroach was crawling near a bag-in-box soda and flies were near the ice machine drain, there was no air gap or backflow prevention device connected to the ice machine, a dirty wet rag and an empty pitcher were in a hand-washing sink. Next inspection: Sept. 24.

Los Pinos Mexican Restaurant, 1225 W. Douglas in Wichita — Two violations on July 24 during a routine inspection. Containers of refried beans and cheese and chili verde sauces weren’t labeled with their preparation dates, no hot water at kitchen or bathroom hand-washing sinks. Next inspection: Aug. 3.

Pizza Hut, 1708 E. Pawnee in Wichita — Six violations on July 22 during a verification inspection. Pizza toppings including meats and cheeses weren’t cold enough in a make table, build up of grease and grime on floors and walls throughout kitchen, dozens of dishes and utensils in clean storage had sticker residue and food on them, no soap at women’s bathroom sink, dirt and grime was caked on fryers and other kitchen equipment, dead bugs in cabinet by drive-thru window. Next inspection: July 31.

Stroud’s Restaurant & Bar, 3661 N. Hillside in Wichita — Four violations on July 26 during a routine inspection. The kitchen floor is “in poor condition” with several divots and craters and rough edges that can’t be cleaned properly, dishwashing machine wasn’t sanitizing dishes, a tub of salad mix wasn’t cold enough, “heavy accumulation” of grease and grime along the floor and on several pieces of kitchen equipment, water in several areas in the kitchen including around the mop sink and floor drains which can encourage pathogens to grow and spread. Next inspection: Aug. 10.

Supplement World, 1535 S. Oliver in Wichita — One violation on July 25 during a routine inspection. The water at the dishwashing sink didn’t get hot enough. Next inspection: Aug. 5.

U-Hungry Truck (mobile vendor/food truck), 4701 N. Glendale in Wichita — Four violations on July 26 during a routine inspection. An employee didn’t use a new pair of gloves to prepare a customer’s order, hand-washing sink was blocked with a metal lid, meat and other foods weren’t cold enough in refrigeration, an employee took off his gloves and touched his face then put his gloves back on without washing his hands or getting a new pair. Next inspection: Aug. 6.

Village Inn, 1685 S. Rock Road in Wichita — Seven violations on July 24 during a verification inspection. A cook didn’t wash their hands between glove changes, the employee bathroom wasn’t stocked with paper towels, several foods including meats and cheeses weren’t cold enough in refrigeration, a container of red chili sauce wasn’t labeled with its preparation date, dishwasher wasn’t sanitizing dishes properly, several containers in clean storage were soiled with food and sticker residue, pancake batter wasn’t labeled with the time it was removed from refrigeration. Next inspection: Aug. 2.

Walmart Supercenter, 6110 W. Kellogg Drive in Wichita — Ten violations on July 23 during a verification inspection. Grab-and-go foods including a chicken sandwich and chicken wings weren’t kept hot enough, a sprayer was hanging below the flood rim on a bakery sink and there was no backflow prevention device installed, bloated and puffy packages of raw chicken for sale, 10 to 15 winged insects in meat department dish room, frozen raw hamburger patties were partially thawed in cooler on sales floor, raw bacon was stored directly on top of fully cooked bacon and beside fully cooked smoked sausage with no barrier to protect them from contamination, cracked storage containers in the deli, 20 to 25 pans in clean storage in the deli had food debris on them, a package of raw shrimp had a hole in it, severely dented cans on sales shelves, a hose was hanging below the flood rim on a mop sink. Next inspection: Aug. 1.

How do businesses fail inspections?

Businesses fall out of compliance when they have too many violations, issues that can cause a foodborne illness, when a problem can’t be fixed right away, such as bug and rodent infestations, and more. But most violations are minor and are corrected while an inspection is taking place.

Typically, establishments are reinspected within 10 days to ensure they are following the rules.

It’s rare for a business to shut down over a failed inspection. But it can happen. Usually, closures are voluntary and due to major things like sewage backups, pest problems, and water or power outages. Typically, they are temporary.
