Cactus Salad great with Tostadas or over Rice, new Idea for Dinner, Cactus Salad Ingredients: 6 Cactus Leaves (24oz), 1 Red Onion, 7 Roma Tomatoes, 1 Jalapeño, 1/4 bundle Italian Parsley, 4 Green Onions, 1 tsp Bouillon Powder, Salt, Pepper, 1 tbsp Hot Sauce (optional), Wash and cut Cactus Leaves in small (bite size) strips. Cut a 1/4 of Red Onion in slices and chop the Rest. Use med sized Pot, combine Cactus, sliced Onion, Bouillon and a pinch of Salt. Pour hot Water over until covered, stir and simmer for 10 Minutes, drain and set aside to cool. Chop Tomatoes, Jalapeño, Italian Parsley and Green Onions. Combine cold Cactus with all the chopped Ingredients and season with Salt & Pepper plus Hot Sauce (optional), mix well. Enjoy!
