A statement released on behalf of his family said, “Shortino, a 3rd generation chef, was not only a culinary trailblazer but also a beloved member of the hospitality community. His passion for food, creativity, and dedication to providing exceptional experiences influenced the teams, friends and patrons of his restaurants and beyond.”
Shortino’s daughter, fellow chef Cassie Shortino, “will step in to fulfill her father’s dream of having his legacy continue with her at the helm,” the family’s statement said. Cassie Shortino was a semifinialist in 2019 and 2020 for the James Beard Award’s rising star chef of the year honor for her work at Tratto in Phoenix.
The restaurants will remain open.
“Chef Shortino’s inimitable style and magnetic soul will be deeply missed, but we will do our best to focus on the great things to come,” the family’s statement said.
Shortino was raised in New York and spent years focusing on Asian cuisine. He opened the first U.S. location of Roka Akor in Scottsdale, Ariz., and he later opened Futo Buta in Charlotte in 2015, according to his bio on the Futa Buta website.
Lincoln’s Haberdashery opened in 2018, offering breakfast and lunch all day, including sandwiches and pastries.
