COOK90, Week 5: Meal Plan and Grocery List

The last week of COOK90 2020 starts with some simple nextovering: On Monday night, we’ll cook these simple cauliflower steaks. On Tuesday, we’ll take the cauliflower florets that were too small to be steaks and turn them into an improvised soup.

On Wednesday we get to cook one of my favorite tofu recipes, Chris Morocco’s shawarma-spiced tofu pita wraps. And we finish COOK90 with two recipes from Epi’s Anna Stockwell: first, her wildly popular squash and feta salad. Then her crispy cornmeal-crusted scallops.

And on Saturday? And Sunday? COOK90 will be over by then, so, essentially, you’re on your own. But you will want to cook. In fact, don’t be surprised if you keep cooking all or most of your meals for several more weeks. The habits you develop on COOK90 are hard to shake off—and that’s the point of doing COOK90 in the first place.

Everything you need for the last week of COOK90 is on the grocery list below. Want to add a bottle of Champagne for your final night? Nobody’s going to stop you.

Basics
You’ll lean heavily on these cooking essentials throughout the week. Make sure you’re stocked up!

Olive oil
Vegetable oil (at least 2 cups)
Kosher salt
Black Pepper

Eggs/Dairy
At least 2 eggs
½ cup Greek yogurt
½ pound Greek feta

Produce
1 medium head cauliflower (if you’re feeding 3 or 4 people, get two)
1 large or 2 small acorn or delicata squash (about 1½ lbs total)
1 small red onion
1 head garlic
2 Persian or mini cucumbers
1 bunch mint
1 bunch thyme
1 bunch basil
1 head radicchio (or ½ head escarole)
3 small or 2 large Belgian endive
3 small or 2 large oranges
1 avocado
Onions, shallots, leeks, celery, carrots, etc, for an improvised cauliflower-white bean soup

Pantry
1 (14-ounce) block firm or extra-firm tofu
Rice vinegar
Sherry or red wine vinegar
White wine vinegar
Honey
Find-grind yellow cornmeal (at least ½ cup)
Cornstarch (at least ½ cup)
Baking powder
Old Bay seasoning
Ground coriander
Smoked paprika
Crushed red pepper flakes
Cinnamon

Seafood
1 pound sea scallops (Note: These will be used on Thursday; scallops are best bought on the day they will be eaten.)

Bakery
4 pitas
1 small loaf country bread
