Pastry Triangles w/ Whipped Mascarpone Custard

Puff Pastry Triangles •1 package puff pastry (2 sheets) •1 egg Whipped Mascarpone Custard •3 egg yolks •1/2 cup granulated sugar •8 oz Mascarpone Cheese •3/4 cups heavy cream •1 1/2 tsp vanilla extract Optional: Berries Powdered sugar Directions: 1. Cut 2 sheets of puff pastry into 36 triangles. 2. Brush with egg wash and bake per package instructions. Whipped Mascarpone Custard 1. Whisk egg yolks and sugar over boiling water until the sugar is mostly dissolved and the egg yolk mixture had thickened. 2. Beat mascarpone cheese and vanilla until creamy. 3. Add egg yolk mixture to mascarpone cheese and beat until thick and smooth. 4. In a separate bowl, beat heavy cream and vanilla until stiff peaks form. 5. Fold in the whipped cream into the mascarpone cheese custard and mix until evenly combined. To assemble, once the pastry triangles have cooled, fill centers with the mascarpone filling and berries. Sift powdered sugar over the top and enjoy!
