1 tbsp pesto sauce
6-8 slices fresh mozzarella
Sun-dried tomatoes, reconstituted and chopped
1 tbsp softened butter
4 slices ciabatta bread
Spread pesto sauce on four slices of ciabatta bread.
Place 3-4 slices of mozzarella cheese on two pieces of bread (6-8 total), followed by the sun-dried tomatoes.
Close the sandwiches by placing the pesto-only bread slices on top of the mozzarella and sun-dried tomato ones.
Spread butter on the opposite sides of the bread.
Toast the sandwiches on the panini press for approximately 5 minutes on each side or until both sides are golden brown and the cheese has melted.
Slice each sandwich in half and enjoy!
