Drying strawberries in the oven turns them into chewy little sweeties, great for snacking but also the best way of cooking the fruit in cakes, biscuits and muffins.

Prep time: 5 minutes, plus chilling | Cooking time: 2 hours

INGREDIENTS

  • 400g strawberries

METHOD

  1. Cut 400g strawberries in halves (or quarters if large: aim for roughly equal sized pieces). Spread out on a large oven tray, cut sides up.

  2. Cook at 100C/80C fan/lowest gas mark for two hours, then turn the pieces and cook for 30 minutes to two hours on the other side, depending on the size of the strawberries. You’re aiming for a soft, chewy strawberry.

  3. Cool and store in an airtight container in the fridge for up to two weeks, or for up to six months in the freezer.
