Ten businesses in Wichita were out of compliance during food safety and lodging inspections conducted by the Kansas Department of Agriculture last week.

They were cited for a number of violations including old meats, not having hot water at their sinks, dead insects in liquor, storing beer cans in ice that was also used to make customers’ drinks, allowing someone who wasn’t an employee to handle customers’ food, and not having all of the required equipment on hand such as thermometers and sanitizer, according to inspection reports.

Information about the food establishments and hotels, as well as a summary of their violations, appears below. The list includes inspections conducted in Sedgwick County from May 19-25. The list was compiled May 29.

More than 60 establishments passed inspections during that same time. They also appear below. Some may have been non-compliant in previous weeks.

Out of compliance inspections

Aguas Frescas Laguna (mobile vendor/food truck), 1919 E. Lockwood in Wichita — Eight violations on May 25 during a complaint inspection. The business was preparing food in a home garage that wasn’t licensed, roasted corn on the cob wasn’t kept hot enough, no hand-washing sink was available, no sanitizer or strips to test its concentration were available on site, no hot water or hand-washing soap was available on site, no thermometer on site. The business was in compliance during a follow-up inspection on May 28.

Delano’s Diner, 1220 W. Douglas in Wichita — Two violations on May 20 during a follow-up inspection. Old turkey and roast beef, old ham and pulled pork, old pasta sauces and mashed potatoes, butter was left out at room temperature instead of being refrigerated. Next inspection: July 20.

Domino’s Pizza, 2047 W. 21st St. in Wichita — Two violations on May 20 during a routine inspection. Pizza sauce that can be left out at room temperature for eight hours wasn’t labeled with the time it was removed from the walk-in cooler, chicken and noodles stored in a reach-in cooler weren’t cold enough. Next inspection: May 30.

El 300 Discotec Bar, 1621 S. Woodlawn in Wichita — Five violations on May 23 during an expired license inspection. The business didn’t have test strips to measure the concentration of sanitizer, no paper towels or hot water at the bar hand-washing sink, no sanitizer available, water didn’t get hot enough at a hand-washing sink. Next inspection: June 3.

Heritage Inn of Wichita, 4539 S. Broadway in Wichita — Five violations on May 20 during a complaint inspection. The motel didn’t have records showing that the carbon monoxide and smoke detectors were checked every six months, the carbon monoxide detector in the utility and laundry rooms didn’t work, the motel didn’t have an inspection report from the fire marshal, the motel didn’t have an emergency plan for employees that lists emergency and non-emergency contact numbers. The next inspection date wasn’t listed.

New Lemongrass Taste of Vietnam, 300 N. Mead, Suite 108 in Wichita — Eleven violations on May 20 during a routine inspection. Shrimp wasn’t kept cold enough in a refrigerated preparation table, old rice, a hand-washing sink in the kitchen wasn’t working correctly, no paper towels at a kitchen hand-washing sink, pans in clean storage were soiled with grease and food debris, the priming pump on the dishwashing machine didn’t work so dishes weren’t getting sanitized, raw pork chops and raw chicken were stored above lettuce and other vegetables in the walk-in cooler, several foods including chicken and watermelon weren’t properly dated, the restaurant was storing beer cans in the ice it uses for customers’ drinks, dead insects in an open bottle of Jagermeister, it was unclear when a bag of cooked shrimp was made, no soap at a kitchen hand-washing sink. Next inspection: May 30.

Oh Yeah! China Bistro, 3101 N. Rock Road, Suite 150 in Wichita — Six violations on May 21 during a routine inspection. The restaurant was thawing fish in standing water instead of running water, the restaurant couldn’t provide the inspector with a copy of its procedures for handling several foods that it doesn’t temperature control including grilled chicken and fried vegetables, foods that aren’t temperature controlled weren’t labeled with the times they were supposed to be discarded, a person in the kitchen touched broccoli that was ready to eat with their bare hands, a non-employee was helping in the kitchen even though only trained employees are allowed to prepare food, raw chicken was stored above cooked chicken in a cooler, raw beef was stored in the cooler above raw shrimp and raw chicken. Next inspection: May 31.

Old Tokyo Steakhouse, 6821 W. Taft in Wichita — Three violations on May 22 during a follow-up inspection. The restaurant didn’t have any test strips to measure the concentration of chlorine sanitizer, a bottle of quaternary sanitizer wasn’t labeled with its contents, no hot water at the hand-washing sinks. Next inspection: June 22.

Scooter’s Coffee, 3480 N. Ridge Road in Wichita — One violation on May 22 during a routine inspection. No food thermometer on site. Next inspection: June 1.

Sweetpop’s, 550 N. Rock Road, Suite 60 in Wichita — Six violations on May 21 during an expired license inspection. No paper towels in the employee bathroom, a container of milk tea mix wasn’t labeled with its preparation date, no probe food thermometer, the restaurant was using a hand-washing sink to rinse dishes, smoothie mix and milk tea mix weren’t cold enough in refrigeration, the restaurant didn’t have any test strips to measure the concentration of chlorine sanitizer. Next inspection: May 31.

How do businesses fail inspections?

Most violations are minor and are corrected during an inspection.

Businesses fall out of compliance when they have too many violations, issues that can cause a foodborne illness, when a problem can’t be fixed right away, such as bug and rodent infestations, and more. Typically, establishments are reinspected within 10 days.

It’s rare for a business to shut down over a failed inspection. But it can happen due to things like sewage backups, pest problems, and water or power outages. Usually, closures are temporary.
