Apples, pumpkins, acorn and butternut squashes make for hearty and satisfying meals.

Apples can be enjoyed out of hand, no prep required. However, apples and spices are mighty nice. Baked apples with cinnamon and brown sugar or maple syrup make for an easy, not so heavy dessert. Apple slices caramelized in a skillet are a good side dish for pork or chicken.

Pork chops cooked with sliced apples, a bit of spicy mustard and maple syrup can be whipped up in 30 to 40 minutes for dinner. Add a side of veggies or rice, and again, it is mighty nice.

Fall apples have variety of flavors that work well with different dishes. For a tart, yet sweet apple, Granny Smith cannot be beaten. Pink Lady, Honeycrisp and Galas are sweet treats and can be used in desserts or main dishes. Delicious apples make apple desserts delicious. Eaten out of hand, Delicious apples can be a bit mealy.

Instead of the usual baked apples, why not try apple pie baked apples that are topped with pie crust?

How to make Apple Pie Baked Apples

First, preheat your oven to 375 degrees. Cut your Granny Smith apple and one Honeycrisp apple into a small dice and place in a mixing bowl. Add brown sugar, granulated sugar, salt, cinnamon and nutmeg and stir to combine. Add in lemon juice and gently toss the mixture.

In a separate bowl, combine oats, pecans, remaining brown sugar and flour. Add in small pieces of butter and incorporate together with your hands until a shaggy crumble forms. Combine with the apple mixture.

Cut the tops off the remaining Honeycrisp apples and use a melon baller to core out the center. Using a pairing knife, slice a thin line around each apple’s circumference, just piercing the skin of the fruit. Spoon in the apple mixture into each apple.

Remove your pie crust from the refrigerator and cut into thin strips. Weave a lattice pattern onto the top of each apple. Place the prepared apples into a baking dish.

In a small mixing bowl, beat an egg and brush the beaten egg onto the lattice of each apple. Sprinkle each with turbinado sugar. Pour an inch of water into the baking dish and cover with foil. Bake for 20 minutes covered. Uncover the baking dish and continue baking for another 20-25 minutes.
