Seven businesses in Wichita — including restaurants, a church school lunch program and several stores — were out of compliance during food safety and lodging inspections conducted by the Kansas Department of Agriculture last week.
They were cited over storing raw chicken in trash bags instead of food-grade containers, a “live full grown chicken” in a dog kennel, bathrooms that didn’t have any hot water, food that wasn’t stored at safe temperatures, insecticides touching food storage bags, filthy kitchen conditions and more. One business voluntarily closed over a cockroach infestation so bad that the inspector saw hundreds of living and dead bugs throughout the building, including on kitchen surfaces and running across a spatula, according to inspection reports.
Information about the food establishments and a summary of their violations appear below. The list includes inspections conducted in Sedgwick County from April 14-20. It was compiled on April 24.
More than 80 establishments passed inspections during that same time. They also appear below. Some may have been non-compliant in previous weeks.

Out-of-compliance inspections
All Saints Catholic Parish School Food Service, 3313 E. Grand in Wichita — One violation on April 16 during a routine inspection. No hot water in the women’s bathroom. Next inspection: April 26.
Aramark Services at Textron Aviation Cafe CMF, 5800 E. Pawnee in Wichita — Three violations on April 19 during a routine inspection. No hot water at hand-washing sinks in the men’s bathroom and kitchen, gallons of milk and a container of heavy cream weren’t labeled with package opening dates, water wasn’t hot enough in the dishwasher. Next inspection: April 29.
Gourmet Asian Market, 10939 E. Harry, Suite 109 in Wichita — One violation on April 18 during a modified complaint inspection. The market had “a live full grown chicken” in a dog kennel about five feet from the back door. Next inspection: April 28.
Louisiana Famous Fried Chicken, 4206 E. Harry in Wichita — Nine violations on April 18 during a complaint inspection. Restaurant thawed raw fish in hot water, pans of raw chicken weren’t cold enough, buildup of grease and food debris on the sides of the fryers and on the reach-in freezer, no paper towels at kitchen hand-washing sink, thawed fish was too warm, cooked red beans didn’t cool off quickly enough in refrigeration, chicken wasn’t hot enough in hot holding and had been left out for too long, flour used to batter chicken and fish wasn’t changed often enough, raw eggs stored above bags of ready-to-eat coleslaw, food was sitting on a rack covering kitchen hand-washing sink. Next inspection: April 28.
Passage to India, 6100 E. 21st St., Suite 180 in Wichita — Ten violations on April 17 during a routine inspection. No test strips for chlorine sanitizer used in dishwasher, cooked chicken and vegetables weren’t cold enough in refrigeration, bus tubs of sauces weren’t labeled with preparation dates, cooked chicken wasn’t hot enough on the buffet line, dicer soiled with “heavy food and grease buildup,” can opener “had a black substance dried on the blade,” blenders and microwave were dirty, cottage cheese wasn’t cold enough in refrigeration, gallons of milk weren’t labeled with package opening dates, raw chicken stored in trash bags in freezer instead of food-grade containers, backflow prevention device on dishwasher leaks, no paper towels at hand-washing sink by kitchen. Next inspection: April 27.
Petro America #3, 1161 N. Broadway in Wichita — One violation on April 15 during a follow-up inspection. No hot water available in building because a “technician incorrectly repaired” the water heater. Next inspection: April 25.
Yaacoub Meat Market, 6100 E. 21st St., Suite 160 in Wichita — Ten violations on April 16 during a routine inspection. Rear external door in kitchen has a one-inch gap under it which can let in pests, “100-200 dead cockroaches observed, behind multiple pieces of equipment and below multiple tables,” facility wasn’t sanitizing utensils, insecticides were stored touching and near bags used for food storage, “bricks of green rodent poison bait (were) being used for cockroach control” but weren’t enclosed to prevent contamination, “large number of cockroaches” in all sizes and both dead and alive throughout facility, “hundreds of dead cockroaches” and more alive ones behind freezers and around water heater, more cockroaches on a preparation table in kitchen and “running across” a spatula, cockroaches on lobby floor and behind meat display, business was using insecticide for roach control that isn’t rated for use in a food establishment, no paper towels at kitchen or bathroom hand-washing sinks. The business voluntarily closed over the pest infestation because it’s an “imminent health hazard.” Next inspection: May 1.

How businesses fail inspections
Most violations are minor and are corrected during an inspection.
Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, such as bug and rodent infestations. Typically, establishments are re-inspected within 10 days.
It’s rare for a facility to shut down over a failed inspection. But it can happen due to things like sewage backups, pest problems, and water or power outages. Usually, closures are temporary.
