Here are Thurston County food safety scores for July 10

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.

  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.

  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • Food worker cards were not available during the inspection.

  • A salsa sauce had been cooling in a deep container rather than a shallow container of less than 2 inches.

  • TCS food items, such as pico de gallo and coleslaw, were above 41 degrees. The person-in-charge restored the items in a reach-in cooler.

Comments:

  • Spam musubi was being kept warm under a stove. Cooked chicken on the wire rack on a stove was under 135 degrees. Hot held TCS foods must be at or above 135 degrees.

  • The menu lacked a consumer advisory for eggs that can be cooked to order.

HMS “Off the Hook”

6541 Sexton Road NW, Olympia

July 2: 30 red points; 0 blue points.

Comments:

  • Various TCS foods were above 41 degrees. A display/undercounter cold hold unit was 50 degrees.

  • A sanitizing solution was too strong as prepared.

  • The food establishment used a commissary for food preparation as well as hot holding and cooling of soups. This process was not approved with the county.

Sidewalk Café

601 Capitol Way N., Olympia

July 3: 25 red points; 3 blue points.

Comments:

  • Meatloaf was wrapped in plastic as it cooled. The meatloaf was measured at 44 degrees. TCS food items must be cooled in an uncovered and unwrapped shallow container with a food depth of less than 2 inches.

  • A container of cooked chicken was not date marked.

July 3: 25 red points; 0 blue points.

Comments:

  • Cooked pasta was measured at 52 degrees in a one door reach-in cold hold. The operator reported that the pasta was not properly cooled at the commissary prior to being transported to the mobile food unit. The pasta was discarded.

The Sandstone Café

273 Sussex Ave. W., Tenino

July 5: 10 red points; 10 blue points.

Comments:

  • TCS food items were measured at above 46 degrees at a cookline station. The person-in-charge restored the TCS food items in a reach-in cooler.

  • An in-use chlorine solution was too weak as prepared.

  • An ice scoop holder had evidence of slime build up.

July 5: 10 red points; 8 blue points.

Comments:

  • The establishment was cited for not following its permit. A restroom was unavailable to customers during all hours of operation. No commissary log was available upon request. A waste disposal procedure was not approved.

  • Wares were being improperly washed.

  • A restroom door did not self-close and an exhaust fan was not installed.

Comments:

  • An in-use sanitizing solution was too weak as prepared.
